- Hailed as the newest superfood, Goji, has inspired a surge of interest for its use in treating diabetes, hypertension, malaria, fever, cancer and other ailments.
- High in protein, antioxidants Goji berries pack more victamin C than some oranges, more beta-carotene than carrots and more iron than spinach. They are rich in B1, B2, B6 and Vitamin E.
- Goji berries are similar in taste to raisins but more tarts. They can be eaten raw or cooked and are a tasty addition to tea, soup and hot cereal. Easily rehydrates in water. Delcious in baked goods in pies, muffins, cakes and bread rolls.

Cranberry and Goji Berry ChutneyMakes about 3 1/2 cups 12 ounces fresh cranberries In a medium saucepan,stir together cranberries, Goji Berries, apricots, and shallots. Pour over apple cider and enough water to cover. Allow to boil, lower heat to simmer and let cook for 15 minutes. Toss in sugar, maple syrup, spices and salt. Let cook for 5 more minutes. Remove from heat and add walnuts and zest. Let cool. Will keep for up to 2 weeks chilled in an air tight container. |
