Cranberry and Goji Berry Chutney

Makes about 3 1/2 cups

12 ounces fresh cranberries 
2/3 cups Goji Berries 
1/4 cup chopped dried apricots 
1 Shallot, chopped 
1 cup apple cider 
2/3 cup sugar 
2 tbsp maple syrup 
1 1/2 tbsp fresh grated ginger 
1 tsp ground cinnamon 
pinch cayenne pepper 
pinch allspice 
1/2 tsp salt 
1/3 cup chopped walnuts 
zest of one orange

In a medium saucepan,stir together cranberries, Goji Berries, apricots, and shallots. Pour over apple cider and enough water to cover. Allow to boil, lower heat to simmer and let cook for 15 minutes. Toss in sugar, maple syrup, spices and salt. Let cook for 5 more minutes. Remove from heat and add walnuts and zest. Let cool. Will keep for up to 2 weeks chilled in an air tight container.
